Coconut LEGO candy recipe

With Valentine's day coming we are all thinking of sweets and special things we can make.  I think of sweets often not just around this time. I have been sugar free for over 3 years now and I am always in search of desserts that will satisfy my cravings. Trust me I was crazy about sugar..if I can go without it anyone can. If you must know though the true discipline is because I get very sick if I eat it. I have been gluten free for over 17 years ( I had to mail order gluten free foods, they were not available like they are today) I currently struggle with Sibo, and Candida. Over these years I have found favorites and would love to share one with you and since I am all about having fun with LEGO I always make my gummies or candies into LEGO shapes because what else would I use! : )

I love Diane Sanfilippo and have been using her recipes for years.  I altered her Lemon vanilla meltaway recipe to make a chocolate version see below

ingredients:

  • 1/2 cup coconut butter 
  • 1/2 cup coconut oil 
  • 1 tsp vanilla extract
  • 2 tbsp cocoa
  • 1 tsp liquid vanilla stevia (or more depending on taste)
  • natural dye*

preparation:

On low heat stir together butter and oil till blended. Whisk in chocolate, vanilla and stevia. For the pink ones I used a pinch of powdered natural dye. Pour the mixture into molds and chill for 20 to 30 minutes or until completely solid. Enjoy! Leave a comment let me know how it goes.
